Ingredients (makes 12, 10 minutes prep time)
250g strawberries, hulled
30g chia seeds
100g oats
30g ground almonds
4 medjool dates, stoned and chopped
1/2 tsp lemon juice
40 g coconut oil
1/2 tsp finely grated orange zest
Pinch of salt
Maple syrup to taste
15g desiccated coconut (optional)
Directions
1 – Place the strawberries in a food processor and blitz to roughly chop. Add in the remaining ingredients (except the desiccated coconut) and blend to a thick paste. Taste the mixture, adding in an extra date for sweetness if required or a little maple syrup.
Chill the mixture for 20 minutes to firm up, then shape into balls. Roll in desiccated coconut if using.
2 – Store in a airtight container in the fridge for 2-3 days or freeze.
